I Love HOT CHOCOLATE!!! Especially with marshmallows! So I thought, “Hey. Hubby makes hot chocolate from scratch, why don’t I make some marshmallows from scratch?” So that’s what I did. Alton Brown from the food network has a great recipe which can be found HERE.
First mix together your water, sugar, corn syrup, and salt into a fairly large sauce pan.

While its heating up, add ½ cup of water and 3 packets of unflavored gelatin to your mixer so it’s ready to go.
Using a candy thermometer, raise the temperature to 240 F. Make sure you stir that way you don’t scorch the bottom.
Remove from heat and add to mixer

3 packages unflavored gelatin
1 cup ice cold water, divided
12 ounces granulated sugar, approximately 1 1/2 cups
1 cup light corn syrup
1/4 teaspoon kosher salt
1 teaspoon vanilla extract
1/4 cup confectioners' sugar
1/4 cup cornstarch
Nonstick spray
